EPIC students returning in 2026-2027

At Crossroads Cafe, we love seeing student energy drive our menu! This month, we’re putting classroom theory into action. After studying the vital role of protein in a student’s diet, our Human Nutrition classes went to work researching the ultimate healthy snack: Energy Bites. After a high-stakes taste test of four student selected recipes, a winner has been crowned! We are officially launching the winning bite for sale in the Cafe this month. These snacks are the perfect "grab-and-go" fuel—they satisfy your sweet tooth while keeping you full through your longest afternoon classes.

Prep Once, Snack for Months! These bites are meal-prep legends. While they stay fresh in the fridge for 1–2 weeks, you can stash them in the freezer for up to 3 months. Eat them chilled for a fudge-like treat! Try out the recipes for these delicious snacks! Which bite will be your new favorite? Swing by Crossroads Cafe this week to grab a sample of our student-led menu and taste what your classmates have been cooking up!

From FarmBox to Fork! The Cafe is also proud to showcase harvests from our own campus FarmBox! Last week, the Natural Resources Pathway harvested three varieties of gorgeous greens, which were featured in a fresh Chicken Caesar Wrap for faculty.

Want to bring that farm-to-table vibe home? Skip the bottled stuff—homemade dressing is cheaper, tastier, and impressively easy. Try this anchovy-free Caesar dressing on your next salad (it’s especially delicious over grilled Romaine or kale!). Try the recipe!

From harvesting fresh, hydroponic greens to hand-rolling protein bites, our students are gaining hands-on experience in the kitchen. It’s all about teamwork, healthy ingredients, and building real-world skills at the EPIC Campus!
